At the heart of Hong Kong’s dynamic dining scene stands Bo Innovation, a two-Michelin-star restaurant celebrated for its avantgarde take on Chinese cuisine. Helmed by Chef Alvin Leung, often dubbed the “Demon Chef,” the restaurant merges scientific precision with cultural storytelling. Born in London and raised in Toronto, Leung is self-taught — an engineer turned culinary icon. His philosophy of “X-treme Chinese cuisine” transforms familiar flavors into multi-sensory art, making Bo Innovation one of Asia’s most original dining destinations.

The current tasting menu, “Feast of the 9,” unfolds as a cinematic journey through texture, aroma, and playful provocation. Highlights include “Dead Aged Cured Hamachi” with green salsa and mizuna, “Scary Scallops” pairing lap cheong and dried shrimp, and the fiery “Big Mala-Masala Eggplant” with burrata and hot honey. Guests may also choose between A4 Wagyu Beef with ceps and beetroot or “Hogwarts” Suckling Pig glazed with strawberry hoisin.

Signature creations like the Molecular “X-treme Xiao Long Bao” — an edible sphere capturing the essence of soup dumpling — and Bo Chicken Rice for Two anchor the experience. Each dish exemplifies Chef Leung’s signature style: daring, precise, and deeply rooted in Chinese culinary heritage.
