BRIKZ in Berlin-Charlottenburg is Arne Anker’s highly personal restaurant—modern, ingredient-driven, and clearly shaped by the seasons. Its signature is defined by bright acidity, rare herbs, plenty of vinegars and citrus notes, and a noticeable affinity for fermentation and pickling (also as a low-waste approach). This style comes through in exciting, precise pairings on the menu: 40°C salmon with Buddha’s Hand, oysters with crème double, myoga and caviar, or a savoy roulade with Wagyu brisket (fantastic!) and egg yolk.
