Robuchon au Dôme

Set atop the glittering dome of the Grand Lisboa, Robuchon au Dôme is a three-Michelin-star institution and one of Asia’s great temples of French cuisine. The restaurant carries on the legacy of the late Joël Robuchon with Executive Chef Julien Tongourian at the helm; Tongourian has led the kitchen for years, preserving the house’s precise, ingredient-driven style while adding his own refinement. Expect the celebrated Champagne, bread and dessert trolleys, a benchmark wine list, and panoramic views—part of why the restaurant has held three stars continuously for well over a decade.

Menus evolve with the seasons, but signatures and recurring themes define the experience: imperial caviar with lobster jelly, impeccably worked Brittany lobster, and Rossini-style dishes (duck or beef with foie gras), all paired with the silken, butter-rich Robuchon purée. In autumn–winter the team rolls out white-truffle tasting menus, a house tradition, with luxurious courses built around Alba truffle; recent seasons have featured special truffle sets alongside the regular dégustations.
